A well-known vegetarian Middle Eastern dish, falafel is a deep-fried ball, or a flat or doughnut-shaped patty, made from ground chickpeas, fava beans, or both. Herbs, spices, and onion relatives are commonly added to the dough. The most common way to eat falafel is in a pita with garnishes of tomatoes, cucumbers, and pickled onions. Falafel balls may also be eaten alone as a snack, or served as part of an assortment of appetizers known as a meze. If used in a sandwich, it can be topped with hummus, tahini, and/or spicy sauces.
